Deep-Fried Turkey Brined in Cayenne and Brown Sugar

Fixings
3 cups stuffed light earthy colored sugar (around 1 1/4 pounds)
1 1/2 cups Dijon mustard
1/4 cup in addition to 2 tablespoons salt
